Estimated cooking time: under 30 minutes
1 cup shredded cooked chicken breast (about 6 oz.)
1/4 cup grated jalapeño jack (1 oz.)
2 scallions, thinly sliced
1 cup low-sodium chicken broth
4 corn or flour tortillas
1 cup your favorite salsa
Preparation
1 Preheat oven to 400 degrees F. Coat a baking sheet with nonstick cooking spray. Place tortillas on baking sheet.
2 Spread salsa on tortillas. Sprinkle with chicken and cheese. Top with scallions.
3Bake for 8 - 10 minutes, until cheese has melted. Cut and serve.
Serve with refried beans (canned); lime wedges, cilantro sprigs.
